Doesn’t the phone update on it’s own when charging at night if you don’t update when you get the pop up? Is there a way to tell it not to update?

When your phone is ready to be updated, Apple will send you a notification which typically is a pop up asking if you want to update now. If you say no, the next pop up will tell you the phone will update during the night while it is charging. It will ask you for your password to approve the update time. Note: you may also see a 1 on your Settings icon which is an indicator you have a software update.
Here’s the trick to skip the update for 24-48 hours! DO NOT plug your phone in at night or it will automatically update. So for a day or two, just make sure to charge before going to bed. Don’t plug the charging cable in or place on a wireless charger either.
Keep your phone Instagram ready!

I know it can be a hassle, but it takes just a little planning and you won’t have to deal with any issues, if one occurs, with any future updates.
